An ancient method of cooking food on stone has been refined at Da Nuong Restaurant in Ho Chi Minh City.

Located near the September 23rd Park and the city’s backpacker area, the restaurant is famous among tourists and local gourmets for its exotic and delicious hot rock menu.

Grilling food on stone can be traced back to the Ancient Egyptians and Vikings, but now this unique dining experience is available in Ho Chi Minh City, with natural volcanic stones imported from Australia.

According to the owner, these stones, selected for their high heat retention, are heated to 400 degrees Celsius in a special oven. The hot rectangular rocks are brought to the table, along with the meat and vegetables that have been ordered and a selection of condiments such as garlic, pepper and chili.

The menu includes pork, lamb, chicken, shrimp and cuttlefish, seasoned with a range of herbs and spices such as citronella, pepper and salt. The “dry cooking” method sears the food without burning it, sealing in all the nutrients. This kind of dinner also offers clean and healthy fare with no fat or oils.

At Da Nuong, guests can enjoy a meal freshly grilled to their personal taste - rare, medium or well-done. Another advantage of the volcanic stone is that it can retain heat for 20 to 35 minutes, long enough for diners to eat at leisure with every bite as hot as the first. With specialties such as cha ca da nong (fish fried on hot stone) and bo nuong da nong (steak grilled on hot stone), Da Nuong Restaurant is a popular place to unwind and enjoy sensational square meals.

An interesting change from other cuisines, this kind of grill really captures the interest of HCMC food lovers.

The dishes range from VND40,000 to VND170,000 (US$2.36-10) at 54 Nguyen Van Trang Street, District 1.
